Crockpot Pumpkin Oatmeal

Getting tired of pumpkin recipes yet? Yeah, didn’t think so. This one might be the easiest yet, and is basically the perfect breakfast for these increasingly cold mornings. It’s warm and hearty and comforting and full of pumpkin! And all you have to do is throw a few ingredients into your crockpot the night before, et voila – a steaming bowl of hearty oatmeal. Here we go.

You’ll need (serves two):

  1. 1 cup steel cut oats
  2. 1 cup pumpkin puree (not pie filling!)
  3. 3 cups water
  4. 2 tsp. vanilla extract
  5. 1/2 tsp. pumpkin pie spice
  6. 1/2 tsp. cinnamon, ground
  7. 1 tsp maple syrup, optional
  8. 1 pinch salt

Instructions:

Mix everything in a bowl that will fit in your crockpot; place inside and fill crockpot with water until it’s about halfway up the side of the bowl; turn on low for six hours; allow home to fill with the delicious scent of cooking pumpkin pie. Wake up in the morning and enjoy :)
